The conversion is a real per-pixel operation: each pixel's red, green and blue values are replaced with their luminance-weighted average, so bright and dark tones keep their natural balance. The intensity slider blends the result with the original — at 100% you get a clean monochrome photo, lower values leave a hint of the original color for a faded, vintage look.
