USDA lowered its recommended pork temperature to 145°F (63°C) with a 3-minute rest back in 2011, down from the older 160°F guidance that produced notoriously dry, grey pork — a whole pork roast cooked to 145°F and rested properly is safe and noticeably juicier than the well-done pork many people grew up with.

That 145°F figure is for whole cuts like a loin or shoulder roast — ground pork still needs 160°F (71°C), since grinding can distribute surface bacteria through the meat. For this whole-roast calculator, check the thickest part with a thermometer, rest it the full 10 to 15 minutes, and expect the internal temperature to climb a few more degrees during that rest.
