The rate here assumes the bird is unstuffed, which is also what USDA itself recommends for both safety and speed: stuffing packed inside the cavity blocks heat from reaching the center as quickly, so a stuffed turkey typically needs roughly 15 minutes per pound instead of 13 — and the stuffing itself must also reach 165°F (74°C), checked separately with a thermometer, before it's safe to eat.
Turkey's target is 165°F (74°C) everywhere in the thickest part of the breast and thigh — there is no lower "medium" option for poultry the way there is for beef, because undercooked poultry carries real risk. Rest the bird 20 to 30 minutes before carving: it keeps cooking a little from residual heat and the juices redistribute, which matters more on a large bird than on any other cut this calculator covers.
